Quinoa Sesame Almond Crackers

These quinoa sesame almond crackers are crispy and nutty and packed with nutrients. If you cook them until the edges are brown you have a flavorful cracker. But, if you take them out of the oven when they are soft, then they are kind of like a soft grainy bread or whole grain pita--even though they don't actually have any grains in them--quinoa is actually a seed. I like to serve these with guacamole.

2 cups almonds (I soak them overnight) or 2 cups Bob's Red Mill almond flour
1 cup Bob's Red Mill organic quinoa flour
1 c. sesame seeds
2 teaspoons salt
1 teaspoons xanthum gum
1/4 teaspoons cayenne (optional)
4 tablespoons coconut oil or olive oil
3 egg whites
1/2- 1 cup water

Put almonds in the cuisinart or food processer and process until they are finely ground. (You can skip this step if you are using almond flour.
Add quinoa flour, sesame seeds, salt, cayenne and xanthum gum. Turn on food processor until combined and finely ground. It will look like coarse meal.
Add the wet ingredients and process until the dough is sticky and not crumbly. Add extra water until it forms a dough and isn't crumbly.
Scoop 2-3 Tablespoons of dough onto a parchment lined sheet tray. Press the dough flat with your finger tips using quinoa flour or tapioca starch or potato flour to keep your fingers from sticking until they are flattened and about the diameter of a pita.
Cook in a 400º oven for 18 minutes.
