Amaranth Cereal with Berries and Coconut


Amaranth is a great alternative to eating oatmeal everyday. This ancient grain was a dietary staple for the Aztecs. The small seeds contain more protein than any other gluten free grain and they are an excellent source of calcium and magnesium. Amaranth can be sticky, so I like to mix in nuts, dried fruit, berries and coconut as well as almond milk.

To cook amaranth, combine 1 cup amaranth seeds with 3 cups water. Bring to a boil. Reduce heat, cover and simmer over low heat for 20 minutes.

Serve warm with pecans, blueberries, goji berries and dried coconut.
